Paired with handcrafted martinis and our riverside Southbank setting, our seasonal truffle menu is a celebration of bold flavour, refined technique, and local Australian produce at its best.

Australian Truffles: Grown in the Blue Mountains, Served in Melbourne

While truffles are often associated with France or Italy, Australia has become one of the world’s top truffle-producing regions and we’re proud to showcase premium truffles grown right here in our own backyard.

Our truffles are sourced from the Blue Mountains in New South Wales, where cool winters, rich soil, and carefully cultivated oak and hazelnut groves create the perfect environment for growing black Périgord truffles.

It takes patience and precision to grow truffles. Inoculated trees must mature for several years before producing their first underground harvest. Once winter arrives, expertly trained truffle dogs are used to detect the ripe, aromatic truffles buried just below the surface. The result? A fragrant, deeply complex ingredient that arrives fresh and ready to elevate our seasonal menu.
