In this recipe, we'll take you through each step, from sautéing shallots, to the final touch of white chocolate. Get ready to surprise your taste buds and impress your guests with this culinary masterpiece. Let's dive in!
2 shallots diced
2 tbsp olive oil
¼ cup dry white wine
¼ cup white wine vinegar
¾ cup cream
2 tsp fresh lemon juice
30g butter unsalted
50g white chocolate
Step 1. Heat the oil in a medium heavy-bottomed saucepan over medium heat. Add the shallots and a pinch salt until just softened for 1 to 2 minutes.
Step 2. Add the wine and vinegar. Simmer until the liquid is reduced to about 2 tablespoons, 3 to 4 minutes.
Step 3. Add the cream (this will help stabilise your sauce and keep it from breaking) and simmer until reduced by one-third, 5 to 7 minutes. Strain the sauce into another warm saucepan over low heat. The sauce should remain warm, but not hot, or the sauce will break.
Step 4. On low heat, whisk in a few pieces of the butter at a time. Wait until each addition is incorporated before adding more butter. Next add the lemon juice and combine. Just before serving, whisk in the white chocolate and enjoy!
